In Apulia, the Galantino family's olive mill is one of the leading producers of extra virgin olive oil. They still use traditional stone mills, but extract the oil with modern presses and centrifuges. Their oil, made from the Peranzana olive, is bottled in decorative, beautifully handcrafted and hand-painted ceramic jugs. In Bisceglie, near Bari, they also run the olive oil classroom for students at the Slow Food University in Pollenzo.
Extra virgin olive oil and pepper
This tangy, aromatic oil is made with fresh chili. It's the classic southern flavor oil and suitable for many dishes that need a special touch at the table. These can include pasta, risotto, stews and soups, roasted meats, or simply toasted bread.
